When we chew bread after sometimes it starts tasting sweet. The saliva present in our mouth breakdown carbohydrates into simpler substances and digest it. Hence the saliva of buccal cavity breaks down the carbohydrates. hence it starts tasting sweet.

Salivary amylase is an enzyme which breaks down the starches found in bread to sugar. This happens very rapidly, so some sugars are in your mouth before being swallowed, making the bread taste sweet.
