When we cut the fruits the organic acids present in the fruits react with the other acid or bases or with other substance present in the air. Also, the fruits sometimes also undergo oxidation.

when we cut some fruits the chemicals present in the fruit will react with some of the gases present in the atmosphere.so they change colour.
