When we keep a dish on stove and lit the stove without any water in it ,after few minutes some gas is released from the dish?where does it comes from?why does this happens?

Well the air carries a bit of amount of  $H2O$ and other substances and particles. the gas maybe $O2$ mixed with other elements but approximately [texO2[/tex]and $CO2$. It happens due to the reaction of heat with air holding $H2O$, $CO2$ and other elements.
