Thus, your Blue litmus paper turns Red because soda water is an acidic solution. This is due to carbonation using CO2 bubbled into water dissociates into carbonic acid which reacts with the litmus paper.

Soda Water is called Carbonate water ,so the ph value of this is 3-4 that's mean it is slightly basic.  

Therefore when we put blue litmus paper in soda water, it turns it color from blue to red.
