When you chew food for a while you notice that the taste of food changes sweet? Why?

The enzymes used to aid in digestion are contained within the buccal cavity, and as such when one masticates a bite of food more enzymes are produced. Carbihydrates are broken down by these enzymes into sugar. Sugar is sweet and these sweet end products taste sweet.

The reason why the food tastes sweeter after chewing it for a longer time because the saliva contains “Amaylase” which reacts with the starch present in the doo and converts it into glucose sugar particles which give a sweet taste to the food that we are chewing for a longer period of time.
