When you take a block of butter out of the fridge ,it is quite hard .however ,after
15minutes it is soft enough to spread .

see.. melting point of butter is really low..that means it doesn't require much heat supply to change into liquid from the solid state. thus, when we remove it from the cool surrounding (fridge) it gains the heat from the room's temperature and changes to liquid (becomes soft).
