Alimentary canal refers to the whole passage through, which the food passes inside the body from the mouth to anus during the process of digestion.  The The ailmentary canal includes the mouth, phyranx, esophagus, stomach, intestines and anus. The first part of the ailmentary canal where the food digestion initates is mouth. In mouth, chewing breaks the food into pieces and it secreates saliva, which aids in solubilizing the contents of food along with it. Saliva contains enzyme salivary amylase.  This enzyme breaks down the complex starch molecules present in the food into simpler sugars, which can be easily digested.
