Emulsification refers to breaking down of larger fat molecules into smaller fat droplets. it mainly occurs due to action of bile in the duodenum present in the initial part of small intestine.

the basic advantage of emulsification of fat molecules during digestion is that it increases the surface area of the fat molecules such that enzyme lipase can act on the molecules and digest them thereby breaking them down from lipids to fatty acid and glycerol.
