This is a vast process I will explain u in short.
Hydroelectric power plant are set up. Large large turbines are fitted below the source of water. Water is made to fall on turbine from a height. By kinetic energy, the turbine rotates . By this rotation electricity is produced.

Hydropower is the most important and widely-used renewable source of energy. Hydropower represents about 17% (International Energy Agency) of total electricity production. China is the largest producer of hydroelectricity, followed by Canada, Brazil, and the United States

Fast moving or falling water is the primary ingredient needed to create hydroelectric power. In most large scale constructions, the water is held back behind a dam and the force of the water being released is used to drive the blades of a turbine which in turn creates electricity that can be fed into the grid.
