Pulses are deficient in amino acids methionine and cysteine.

  • The 9 essential amino acids are all distributed unevenly across the food we eat on a regular basis whether it be vegetarian food or non-vegetarian food.
  • Pulses have a high content of the amino acid lysine and cystine but lack methionine and cysteine.
  • On the contrary, cereals lack lysine but they are rich in the amino acids methionine and cysteine but, are deficient in lysine.
