since aldehydes have hydrogen instead of carbon attached to that carbonyl carbon, the aldehydes have a less amount of steric hindrance. Since there is less steric hindrance, it’s easier for nucleophiles to come in and attack at that carbon center. Since it’s easier for nucleophiles to come in, then the aldehydes will react faster and so therefore are less stable than ketones are.
