During formation of clouds water vapour condenses to form clouds but its composition doesn't change. Hence, this is physical change and not a chemical change. In all other examples, i.e. baking of cake, ripening of fruits, rancidity of butter their actual chemical composition changes. Hence, they are chemical changes.
