When we heat sugar then a substance is formed known as Charred sugar.
• When sugar is heated uninterruptedly then a black chalky substance is formed. The substance is identified as Charred sugar.
• When we heat sugar, It will first melt (at around 140C) and very soon after that start to decay, changing to brown, and if we continue heating it will turn black and give off fumes as the sugar decays down to carbon and the hydrogen and oxygen in the molecule vaporize as numerous organic fragments.
