Bacteria used in making of curd is Lactobacillus.

  • The bacterial culture converts milk to curd. This is achieved by the help of lactic acid bacteria.
  • The characteristic feature of these bacteria is production of lactic acid that helps in precipitation of milk protein subsequently forming curd.
  • This is due to decrease in pH due to formation of lactic acid.
