Bacterium which causes spoilage of canned food are mesophilic and Thermophilic Bacteria.

EXPLANATION:

The canned food microbial spoilage can be classified in thermophilic bacteria and mesophilic organism. These are the factor that spoiled the canned food. These spoilages happen through thermophilic spore forming bacteria and Biological Spoilage.

Thermophilic spore Bacteria is mostly present in those foods which is under processed heat and in other hand when microbial activity is cause of biological spoilage. Due to overheat microorganism growth will occur.
