Chemicals are normally not used to whiten cauliflowers, as they alter the development and ultimate taste of the vegetable. Bleaching is very rarely done to whiten cauliflowers.

Blanching is the technique used to get white cauliflowers, by protecting it from the sun. In this method, the large leaves surrounding the developing vegetable (usually after about 30 days of development) are gathered and bunched up on top of the vegetable, forming a protective shade from the sun. This technique yields white coloured cauliflowers.

No chemicals are used in cauliflower to bring more brightness. Mostly the covering of floral head of cauliflower with the help of leaves to protect the direct sunlight is sufficient to keep whiteness. During cooking the cauliflower people should avoid using the iron pan to protect its whiteness.
