Calcium Carbide (CaC₂) is the chemical that is used to make the fruit attractive and ripened.
The most commonly used chemical for artificial ripening is Calcium Carbide is a carcinogenic substance that is banned under PFA Rules, 1955 and also under Food Safety and Standards (Prohibition and Restrictions on Sales) Regulations, 2011 made thereunder. It is also popularly known as ‘Masala”.
Unsaturated hydrocarbons such as acetylene, ethylene etc. can promote ripening and induce colour changes effectively.
Also, Ethephon and oxytocin are reportedly being used in fruit and vegetable markets and farms for artificial ripening of fruits and for increasing the size of fruits and vegetables respectively.
