which dc motor is preferred for elevators

Here's your answer,

First, DC motor is not being used in modern elevators. It is VFD controlled induction motor doing duty.

But if I were to choose type of DC motor for elevator, it would be DC shunt motor.

It is true that DC series motor is generating high starting torque but its speed highly varies as per mechanical load on it. For elevator we need constant speed/torque characteristic, that we get from DC shunt motor.
