Cellulose is a digestive enzyme which helps in digestion of cellulose in various animals except for human beings because human beings lack the presence of cellulases.

Cellulase is present in ruminants like cow, sheep, et cetera. Cellulomonas are the bacteria present in the flora of the rumen of the animals which produces the enzyme cellulases.

The cellulases break down the acetal beta linkage of the cellulose. This acetal beta linkage cannot be broken down in humans due to the absence of cellulases.
