There is starch in baked potatoes, when it mixes with the saliva an enzyme known as the ptyalin reacts with the starch present in the baked potatoes and converts it into maltose, isomaltose and dextrin. The pancreatic juice present in the small intestine also contains a starch digesting enzyme called the pancreatic amylase which also reacts with the starch in the potato to give our the same products after reaction.
