Nitrogen gas is filled in all packed items to prevent spoilage. In Kurkure also.

Rancidity is the condition produced by the aerial oxidation of food due to exposure to oxygen marked by unpleasant smell and taste.
Oils and fat containing foods which become rancid.
So, generally to avoid rancidity kurkure and other chips packets are filled with Nitrogen gas which do not allow reaction with Oxygen.
