The sulfurous-smelling sulphide vapor is also released when an egg ages. The illustration, left, show changing levels of carbon dioxide degrade the egg white proteins, causing the release of the repulsive-smelling hydrogen sulfide gas. Hydrogen Sulphide gas at concentrations below 30 ppm smells like rotten eggs.
