Let me answer the question , it might be offensive or might not be but if you are still reading, go on and complete.
IITians who are toppers in JEE advanced mostly take up CSE at IITB as it is their first choice. It is not always the case, like in 2006 The topper after taking up CSE in IITD moved to MIT after two years and pursued physics because CSE didn't interest him.
Now, it is completely understandable why toppers or others want to choose CSE at IIT's :
CSE is the only branch which guarantees you a High package job at a giant IT company(Google, Microsoft, Amazon,Uber,Facebook,Tower Research,Rubirik) . The packages are so high(at least they are represented so in front of toppers) that the toppers get carried away forgetting that they studied PCM for last few years.
Studying PCM for last few years didn't make them enough inclined towards it, because had that been the case they would have never left Pure Science at any cost. So basically this makes clear they were studying because they needed to do so, had it not been compulsory for getting into IIT,they wouldn't have studied it.
Most(90%) of the toppers don't know computers in depth, there are innumerable problems that a regular computer operator faces which opens him to challenges. Now since they(toppers) are new to this field , this gives them another reason to satisfy themselves why they are taking up this course.
Now as I explained there are concrete reasons behind toppers taking up CSE but I know some (including me) who will never give up pure science for CSE only. one of my friends got a great rank at advanced and now he is studying in IISER-P.
So these guys exist too, but what matters is where your interest lies. Interests change, and possibly after 3 years of hectic pressure the toppers prefer a change in the routine and try something new.
I guarantee you , if CSE was not the highest placed branch and Civil Engineering was then all the toppers and others would have opted for it.
They basically make up a dream 3 years ago, this allows them to live their dream ,even if it is not their favorite subject, they know how to make it so.
Last paragraph about me, well in my case if by any chance I get to secure something in between 500–1k(or lesser) then I won't go for CSE. This is not because I don't love CSE but because I know what is there in the field and I have lost interest in it 4 years ago.
I had my own PC since I was 6 years old, with a 128 MB Ram,Pentium 3 processor. So I have been doing it 10 years straight from then, and I have done almost everything there is to do, did all coding, developed web browsers, softwares ,animated(3Ds Max,Maya) , Developed games(My biggest passion) and stuff . But you can't continue something forever, I needed a change and I found mathematics .
