An enzyme is a biological catalyst which speeds up chemical reactions. During digestion food is broken down to release nutrients which are absorbed. Salivary amylase is produced by the salivary glands in the mouth and is the first enzyme in the digestive process. It catalyses the reaction in which starch is hydrolysed into maltose and dextrin.
