Vegetables can last in the fridge for two days or more depending on its type. There are various precautions one can take to prevent vegetables from decaying which include the following:

1. The temperature of the fridge to be regulated. For example the ideal temperature for winter produce is 32 degrees F.

2. Summer produce of vegetables should all be stored in separate plastic bags in the refrigerator.

3. Certain foods are to be kept away from each other to prevent premature spoiling.

4. Keep all veggies as dry as possible in the crisper drawer.

The process of breaking down or decomposition is called decay. Vegetables become inedible after they decay.  

There are four types to prevent the decay of vegetables. They are,

  • Salting  
  • Canning
  • Pickling
  • Freezing

Salting is also called as the drying method of preservation. Excess salt is added or rubbed over the vegetables as it reduces moisture and hence, delays decaying.

Canning of vegetables is another effective method of vegetable preservation when cans or glass jars are used. They prevent entry of decomposers.

Pickling is the process of preservation by turning the vegetables into pickles. The vegetables are placed in a jar containing vinegar where they undergo fermentation process which boosts the vitamins.

Freezing is the process cooling the vegetables beyond their freezing point. Once they are frozen, no decomposers can feed on the frozen vegetables.
