Two ways in which we can delay the onset of decay in fruits and vegetables are by storing them in refrigerator or by keeping them in moisture free condition, away from excess heat and cold.
Decay is caused in fruits and vegetable by mould, bacteria, yeasts etc. Micro-organisms secrete enzymes that speeds up decay. These enzymes break down compounds which are then absorbed by their cells as food.
