Which micro organisms convert sugar into alcohol during fermentation?

Fermentation is a metabolic process that converts sugar to acids and gases, or alcohol. It occurs in yeastand bacteria, and also in oxygen-starved muscle cells, as in the case of lactic acid fermentation.
