Dark green leafy vegetables are an excellent source of fiber, folate, and carotenoids. These vegetables also contain vitamins C and K and the minerals iron and calcium. In addition, dark green leafy vegetables act as antioxidants in the body.
4 precautions are:
Use of Lemon or tamarind juice helps toconserve the vitamins. 
It is preferable to cook vegetables in minimum amount of water keeping the vessel covered and to consume it as soon as possible. Reheating cooked vegetables further destroys vitamins.
Deep frying and heating for a long time or heating at a high temperature should be avoided during cooking.
