Copper
Because copper is a good conductor of electrical and heat energy. It takes the electricity and heat faster then all.

So copper has greatest specific heat.


If how much we heat the water that much It may heat. But it has a particular and lower capacity. It get to vapor soon

Iron is heated slowly and it is bad compared to the copper. I think iron is the best.

Mercury can absorb more heat but it's capacity is not required for heat
