Heat waves can be polarized as they are transverse waves whereas sound waves cannot be polarizes as they are longitudinal waves.

Transverse waves can oscillate in the direction perpendicular to the direction of its transmission. The movement of the direction of waves is depends on the elastic and inertial properties of that medium.

But longitudinal waves oscillate only along the direction of its transmission. So, longitudinal waves cannot be polarized.
