Which one is a chemical change - fermentation of fruit juice or diluting fruit juice?

Fermentation refers to the chemical breakdown of a substance when affected by bacteria, yeast or other micro-organisms.

If you dilute a fruit juice it is not a chemical change because the properties of the juice will not undergo any changes.

But fruit juice once fermented, is a chemical change as original juice cannot be retrieved.
