The string of any stringed instrument vibrates at a certain frequency when they are plucked. Naturally, the strings of sitar, ukelele, guitar, violin, etc. vibrate when plucked. But to amplify this sound, a hollow body is required. This is where the hollow wooden cabinet of acoustic instruments come into play. The larger the cabinet, the greater the vibration inside it. So basically when you play a sitar or ukelele, it's strings as well as its entire body vibrates.
