If we're talking about writing pens on Earth ( note, there are Space Pens too! ), they work on the principle of gravity.

You'll see a ball which is fixed at the end of a narrow tube. This narrow tube is joined to a ink reserviour ( called the refill ). As we put down the pen, the ink, due to gravity, comes over the ball present at the tip of the pen. When you move the pen on the paper to write something, the ball rotates in it's position and brings the ink from the tube to the paper below.
