Because you lose information when you perform the function.

Possibly the easiest way to explain this is with square roots. When you square something, you lose its sign information. Square root it? You get back the magnitude of the number (e.g. -4*-4 = 16 ... SQRT(16) = 4), but not its original sign. You've lost information by performing that operation.

The same applies to sin/cos/tan... Think of a sin operation as the minute hand on a clock.
