Strictly speaking nothing (V, I, f, mutual flux in the core, parameters etc ) remains constant.
Mutual flux in the core is generally assumed constant in the analysis of the transformer, but with the assumption of constant voltage and frequency, and V and f are not in practice strictly constant.
The parameters R and X on both sides and Rm and Xm are assumed constant, but they do change albeit by a small amount.
