When you’re building a house on a hill, you have to drag everything you need to build the house up the hill. That includes wood, bricks, sand, nails, windows, etc. If you’re going to use a stone-based material (instead of, say, wood, stucco, etc.), then you can probably find a lot of rocks and stones that have rolled down the hill over time. Why not use the natural material you can find on the building site? It’s free, you don’t have to pay someone to make it, OR drag it up the hill to your house.
Using “natural” materials also makes the house blend in to the landscape a little bit more. It’s not like people would believe that these stones just happened to fall into a pile shaped a bit like a house, but at the same time, you don’t really find matching red rectangular bricks occurring in nature either.
