So when a leaf is heated in alcohol, they decolourise as alcohol extracts the chlorophyll of the leaf and thus leaf becomes pale yellow. Chlorophyll is soluble in organic solvents such as ethanol, hence ethanol or methylated spirit is used to soak the leaf, to remove the green pigments i.e. chlorophyll of the leaf
