when salt is added to water in which there are vegetables,the amount of water(pure/clean) outside the vegetables becomes lesser than amount of pure water inside the vegetables.
So due to osmosis/diffusion the water moves from area of higher concentration to an area of lower concentration
which means that the water present in the vegetables goes from there to outside of the vegetables...so they release water
