while drawing a V-I graph, what should be taken x-axis and the y-axis?

Any thing can be taken as X-axis and Y-axis.

Such as:

If we take V on X-axis the I must be on Y-AXIS.

And, If we take I on X-axis and V must be taken on Y-axis.

Current is taken on x axis

Volt is taken on y axis

But different books shows different plotting
