while making various food stuff, Jagger is used along with tamarind.why is this so?

bcoz tamarind is acidic and jaggery is alkaline

Jaggery is stored sugar from palm, coconut, dates and sugar cane etc coarse when used with tamarind in the dish it will furnish a more intense taste and fragrance to the food than confectionery sugar. It is known as  "ping thong" in China and  Gula Melaka in some of the Asian countries. It is used in preparing curries, even in desserts and baking.
