Jaggery is the concentrated form of sugar from palm, dates, sugarcane, etc. and is used along with tamarind to mask some of the sourness of the acid that is present in tamarind and also to impart a sweet flavour to the food.

The acidic nature of tamarind is due to the tartaric acid (IUPAC-2,3-dihydroxybutanedioic acid) present in it and hence it is sour in nature.
