A minority would be a non-white (excluding Jewish), non Christian, non heterosexual and/or female. On another note, college admissions officials give preference to legacy students (family members of past grads), athletes, children of prominant families and the children of the board of trustees.
Basically, a minority in the sense that you speak of is a disadvantaged group.
