They knew with the help of sun. In ancient times as no stopwatch or regular watch was available people used sun and stars or other constellations in night to know about the time. You may have noticed that around 12pm in daylight sun is present right above your head and that’s how ancient people used sun as their source to know time. There is no evidence as how accurate this technique was but yes indeed it was useful and still is in use on this present day.
