Modern Hindi literature technically started in the early 1800s when some officers of the Company encouraged vernacular literature. Since then, there have been various movements in Hindi writing and each movement has had its own set of pioneers. It is thus extremely difficult to pull out one Shakespeare or Chaucer.
If you want a general overview of Hindi literature then I guess the wikipedia page should be a decent start. However, to start a more in-depth study, you should read 'Hindi Sahitya ka Itihaas' by Acharya Shukla. It was the first attempt at a serious and scientifically researched history of Hindi literature and includes the contributions of major figures.
