The reason of choosing 82°30' E as our IST is because it was the center most longitude for India.

82^•30 is chosen as India’s meridian because it is a longitude which passes from the middle of India in Allahabad. It is also called IST which means Indian standard time. It is 5 and 30 hours ahead of Greenwich mean time(GMT)
