Why a bread piece kept in buccal cavity starts tasting sweeter after some time and not immediately?

Answer:

Because the starch in the bread is broken down into maltose by the salivary amylase over time.

Polysaccharides do not taste sweet but disaccharides do. The sweet taste is felt due to the aforementioned process.
