There is an ignition temperature for every substance. Below this temperature no object catches fire.
Matchstick's ignition temperature is above room temperature so it does not catch fire at room temperature. when we strike matchstick on a rough surface it's temperature increase due to friction and when it reaches ignition temperature it catches fire.
