Why a nand gate is also known as universal gate?

Because you can use multiples of NAND gates to create any of the other basic AOI ( AND, OR, INVERTOR gates), or any combinational circuit for that matter.

NAND and NOR are called universal gates because all the other gates like and,or,not,xor and xnor can be derived from it.
