The car which is coming toward the person already has some momentum, which is directly proportional to the car's mass and velocity. Whereas, the person is standing idle with zero momentum. When the fast moving car hits the person, the momentum from the car is transferred to the person, resulting in the person gaining velocity. This way, the person flies in air.
