Boiling point of alcohol = 351 °K
boiling point of water = 373 °K
Higher boiling point means that more kinetic energy is needed by the molecules in the liquid state to go into the vapor state. That means that the bonds between the molecules of water are more than the bonds between the molecules of Alcohol.
Since Alcohol molecules have less cohesive forces, they escape into gaseous state much more rapidly, when same amount of heat is supplied to both liquids.
Also due to the smaller cohesive force, the latent heat of vaporization of Ethyl Alcohol: 841 kJ/kg. and that of water = 2, 260 kJ/kg
Since less latent heat is required, Alcohol vaporizes much more rapidly than water
